The Most Underrated South Indian Sweet |Pusani Halwa |White Pumpkin Dessert | Traditional Kasi Halwa

Reminiscing those White Pumpking halwa making during childhood decades ago


I have prepared pumpkin halwa two decades ago along with my sister when my mom keeps pumpkin sambar we use to snatch some pieces of white pumpking and grate and do halwa together with my sissy those scenes are reminiscing in my mind while making the halwa again and feels emotional. whatever childhood days funny cooking is unforgettable.....

✨ABOUT THE RECIPE:

▼INGREDIENTS:

White Pumpkin - 1 ( extracted nearly 900 g of pumpkin flesh with water )

Ghee - 2 and half tbsp

Sugar - 200 g

Cashew- 1/4 cups

Cardamom - 5 crushed

Food colour or kumkum of your choice


▼PROCEDURE:

Buy this combination of Pumpkin it mut be half green and half grey colour which seems old

halwa taste great only in big size pumpkin hence please be mindful before buying it

I have prepared Pumpkin halwa two decades ago after now only making it again

Myself and my sister used to make this halwa during my childhood usually i prepare in white pumpkin which is rich in taste

Remove the seeds

white pumpkin also great for sambar recipes

do not remove upper layer juicy part as it is healthy

here I am grated for almost 1 hour extracted with juice now will squeeze with hand palm itself

squeeze gently is enough as some juice is necessary for cooking pumpkin

Nearly 900 g of pumpkin with gentle squeezing do not squeeze in cloth

add Two and half table spoon of ghee into heat pan

lets first fry the cashews

take into plate once turned golden brown

Now saute the pumpkin in simmer

main thing is you have to stir frequently in simmer until water evaporates

Stirring frequently will not burn at bottom wok

It took 40 minutes to shrink the pumpkin after shrinks add 200 g sugar

200 g sugar is more than enough as the quantity of pumpking reduced

while measuring it was nearly 900g but actually it was not 900 g now juice evaporated and quantity reduced hence 200 g sugar is adequate

now pinch of food colour with few drops of water

you can also replace it with kumkum as pumpkin has cooling effect kumkum hot nature

Some crushed cardamom 5 pieces Ensure the entire cooking process in simmer only

Close with lid and let it melt in sugar for 20 minutes meanwhile check and stir 3 times

after 20 minutes it totally thickens

see how the quantity reduced hence i use big pumpkin

top up with fried cashews

turn off flame and serve hot

Since Pumpkin has cooling nature avoid consuming during winter and rainy seasons

The halwa also called kasi halwa
