Exploring Jigarthanda with Almond Gums, Nanari, Vanilla Ice cream, I missed in Madurai But made self

ABOUT THE RECIPE:

▼INGREDIENTS:

Almond gum - 5 g

Boiled milk - 1 litre

sugar - 210g

water - 80 ml

Ice cream - vanilla flavour

nanari sarbat


▼PROCEDURE:

Almond gum - 5 g I here took to serve for 4 persons

Pour half cup water to soak over night completely atleast 8 hours as it bulges

look 5 g of badam pisin how turned into full cup entirely hence use small amount of almond gums

take 1 litre of raw cow milk

Boil this milk for 25 minutes on simmer until thickens

If you do not know how to boil milk press the top right i button where i shared How to boil milk perfectly

Pour 210 g of sugar and saute in medium flame

Keep stirring

Keep stirring until it turns yellow and also in liquid form

See it turns dark yellow as i said already now add 80 ml water

Stir constantly for few minutes until it comes into consistency

Do not boil long time turn off the flame as it becomes jelly

see bring out like this in liquid form

even if it becomes thick no issue you can add some water and stir well to bring it in liquid form

Now sugar syrup is ready take into the bowl and keep aside

few months ago i gone to madurai where i missed jigarthanda recipe due to hectic travel if you go there share me how it taste

Hence i would like to make myself the perfect jigarthanda

Milk is boiled and raw smell goes off turn off flame and cool it completely

I kept the boiled milk in refrigerator for 15 minutes and then cooled it

Pour 3 tsp of nanari sarbat

Pour 3 tsp of almond gum which is soaked overnight

next milk to be added as per requirement

Sugar syrup 2 tbsp and mix well deeply

You can also directly add the sugar syrup into the milk itself and then you can make jigarthanda

but here for beginner i am adding separately based on each person requirement so the rest milk can be served for evening coffee or tea

finally add 2 scoop of ice cream here i am adding vanilla flavour

top up again with nanari sarbat

top up with crushed walnuts and pistas nuts as per your choice

repeating the same process entirely once again to serve
