The Carrot are seemed fresh from ooty so that it was damn hard to cut with knife it requires
heavy pressure to put on grater to grate the carrots . Look for those carrots whenever you
try to make this halwa once carrots are sauted on aromatic ghee pour fresh milk on it to
make the carrots into thick halwa form it make requires more time to make into thick
consistency for that you must need to stir continuously as like i shown you in this video.
✨ABOUT THE RECIPE:
▼INGREDIENTS:
Fresh Carrot - 500g or 5 carrots
Ghee -100 g
Sugar - 200 g
Milk (Boiled) - 500 ml
For frying nuts:
Ghee - 1 tbsp
Cashewnuts - 1/4 cup
For Grinding in coarse powder format:
Cardamom - 5 pcs
Badam - 1 cup
▼PROCEDURE:
1. Add ghee 1 cup to the wok let it melt
2. Take 500 g grated carrot ( it was peeled washed )
3. Pour the 500 g grated carrot in ghee
4. Roast on medium flame for 10 minutes in ghee
5. Pour Boiled milk 500 ml stir it for 15 min medium flame
6. This process of stirring makes carrot soft and supple
7. After 15 min Add 200 g of sugar to it and saute it
8. You can see juice oozing from carrot while adding sugar
9. Close with lid for 15 minutes on simmer meanwhile stir at regular intervals for 3 times
10. Now turn off flame and keep aside
11. Add 1 table spoon ghee fry the Cashewnuts
12. Once nuts turned golden brown add into the carrot Add along grated Badam powder and cardamom to it
13. Stirring them continuously is mandatory
14. The carrot halwa is ready to serve with garnishing cashews.
15. Make sure you continuously stir carrots so that it doesn,t burn from bottom of the wok.
