Carrot Payasam (Carrot Kheer): A Creamy & Flavorful Delight | gajar ka kheer

Exploring Carrot Javarisi Payasam is a delicious South Indian dessert made primarily with sago pearls (tapioca pearls)

✨ABOUT THE RECIPE:

▼INGREDIENTS:

Carrot - 3

tapioca pearls ( Javarisi) - 6 tsp

sugar - 220 g

boiled milk - 2 cups or 400 ml

water as required

ghee - 1tbsp

walnuts, cashewnuts 10, raisins,badam


▼PROCEDURE:

Making carrot payasam in a pressure cooker is a convenient method that can save time while still yielding a delicious dessert

add 1 cup water then Add the grated carrots 3 keep 2 whistles in High flame and after off flame

Pour 400 ml water and boil it on heating

wash tapioca pearls ( Javarisi) - 6 tsp in water and then add once water boiling

Change medium flame and stir constantly for 15 minutes

after boiling 15 min drop sugar - 220 g

stir for 4 min after add 400 ml boiled and cooled milk

once carrot cooled blend with little carrot boiled water itself

stir constantly until it mix well

boil for 5 min and turn off flame

In a separate small pan, heat the ghee - 1 tbsp

Fry the 10 cashew nuts until the cashews turn golden brown

Chopped badam to be added next and fry in medium flame

some walnuts and raisins to be plump up

turn off flame and Add this tempering to the carrot payasam

Tips : Be cautious when opening the pressure cooker after cooking to avoid hot steam.

This method should make your carrot payasam preparation simpler and more efficient, especially if you're making it for a larger group or for a special occasion
