Exploring Succulent Mutton Kebabs: A Flavorful Grilled Delight | Mutton Kabab 2024
✨ABOUT THE RECIPE:
▼INGREDIENTS:
25 g Dried red chilli in 250 ml water
Mutton minces - 285 g
Garlic - 33g
ginger - 30 g
Oil 350 ml
onion - 1 medium size
water 130 ml
gram flour - 215 g
▼PROCEDURE:
Take 25 g Dried red chilli in 250 ml water and boil for 3 min until it sucks the water
cool completely before blending ginger - 30g garlic - 33g
this process make the kebab enrich the taste if you have red chilli powder add 1 tbsp directly while cooking mutton
I use this water for later purpose excluding the seeds after add 1 medium onion
now rinse the minced mutton pieces which is boneless and cook for 5 min in high flame to become soften
add turmeric powder to remove the dirt
the left over boiled water which is almost 140 ml add to the jar mix well into it after again add 130 ml water and salt half spoon
keep high flame to boil after add the precooked mutton pieces into it
You can also add fine pepper powder - 1 tsp which is optional
keep 4 whistle depending upon the quality of mutton in medium flame
Take gram flour 215 g and add salt - 1/4 tsp
mix well completely since the masala is highly spicy use hand gloves to mix
during my childhood days my mom will directly add the mutton minces to the flour as it was tender and soft but now a days mutton quality is not the one i had in the former hence i cook this before adding
add 20 g coriander leaves and mix well
marianate for 40 min
take 350 ml oil and boil for 5 min in high flame until bubble form
after change low flame while dropping kebab
drop small sized round balls so that mutton will cook inside soflty
keep flame medium while frying flip occasionally
fry for 7 min until changes colour after change flame low take into the plate
always note keep flame low while dropping after change medium flame so that it will not spill over
Tip : If you add pepper powder use fine powder so that it will not burst or spill while frying in oil
