Exploring Chicken Biryani Using raw Dried Red chilly

Here I shared unique technique of making biryani using raw dried red chilli where i use red chilli powder generally but this form of making it enhances and makes biryani flavourful and ric in taste also it goes well for festive occasions and also those who eats spicy . but make use you follow the process correctly as the raw masala has the tendency of spices it may takes bit time tp melt into the chicken hence cook the chicken in simmer in oil itself . watch out fully to know entire process of making biryani topnotch also share among your friends......


✨ABOUT THE RECIPE:

▼INGREDIENTS:

Chicken - 875 g washed 3 times with water ( water for chicken - 300ml )

Biryani Rice - 710 g ( water to cook rice - 1500 ml)

Dried Red Chilly - 25g ( water to boil chilly - 220ml) use fresh quality dried red chilli

chopped onion - 4 medium size

tomato - 5 and 1 more for grinding paste

ginger - 55g

garlic - 41 g

oil - 90 ml

ghee - 1 tsp

cinnamon - 8 small stick | cloves - 8 | cardamom - 5

mint and coriander - 70 g

salt - 1 tsp

turmeric - 1 /4 tsp

curd - 1 tsp

soya sauce - 1 tsp

lemon - half


▼PROCEDURE:

Dried Red chilli - 25 g

Water - 220 ml

Boil on high flame for 5 minute

leave for 10 minutes to soak completely this process is unique hence watch keenly

this method of using raw chilli enhance taste but a bit tedious process unlike the former one

ginger - 41 g

Garlic - 55 g blend it

One medium size tomato for blending paste finely

This is the masala gonna add to the biryani in my previous video i always add red chilli powder

Oil - 90 ml pour on high flame

ghee - 1 tsp i here added home made ghee

Cinnamon - 8 stick | Cloves - 8 | Cardamom - 2

Chopped onion - 4 medium size

Saute well medium flame till becomes transparent

This method suitable for joint families as it is tedious people who need to cook in short time use my previous method

I shared it in my description anyway all my techniques are topnotch

Add chopped tomatoes - 5 small size

let it shrinks on oil

now add the masala paste into it

let the masala cook in oil for 5 minutes do not add water

Since added Raw masala it takes bit time to melt in

Salt - 1 tsp

Turmeric - 1 /4 tsp

Chicken - 875 g washed 3 times

Drop the chicken mix well or you can also precook chicken for 5 minutes before dropping into it if chicken seems hard

The raw masala must penetrate into the chicken before adding water hence cook for 10 minutes in oil itself

oil floats up Keep sauting in simmer

after 10 minutes add coriander and mint leaves 70 g

More the mint leaves than coriander gives taste aroma for biryani

Saute 5 min and add 300 ml water

generally chicken consumes less water be accurate while adding water

cook on simmer for 20 minutes till masala absorbs into chicken

Malik Deenar rice - 710 g wash two times in bore water

malik deenar is rich in taste for biryani rather than basmati

soak the rice for 45 minutes in drinking water

after 20 minutes pour 1 tsp soya sauce (optional )

adding soya sauce gather all masalas into one form also it dominates the masala hence not to exceed beyond 1 spoon soya sauce

pour curd 1 tsp

cook again for 25 min

now squeeze half lemon into the gravy

let it comes into gravy cook for 15 minutes

pour 1500 ml water and boil high flame

once the water heaten up add some coriander and mint leaves 3 cardamom

adding those makes rice flavourful and aromatic

when starts boiling add soaked rice into it

keep high flame

cook rice for 6 minutes semi cooked is enough as we keep dum

drain water

only after chicken comes into gravy form add rice since we used raw chillies in it

while dropping rice keep flame simmer so that it does not burn at the bottom wok

keep mixing we almost done the process

now cover and off the flame keep the rice water on top

dum for 5 minutes enough

use fresh quality ingredients for topnotch biryani as i mentioned earlier

the rice is flavourful
